Hara Matar or dried green peas is made from harvesting and drying matured green pea pods. It is eaten as a substitute for fresh green peas, which are not available throughout the year.
Dried pea is native to Asia and Europe and its consumption dates back to pre-historic times. Peas were consumed in their dried form until the cultivation of green peas in the 16th century prompted people to eat fresh peas.
In India, Hara matar is a popular dish in the northern states of India. The ideal way to cook this legume is first to soak it in water overnight and then boil it until the peas start to turn tender.
Today, the largest commercial producers of dried peas are China, France, Russia, and Denmark.
